"The Basic: Smash avocados with a fork and then add other ingredients. This recipe is my Guacamole. It has 10 ingredients and is very smooth. You can keep it in the fridge for 3 days and it will still have good color and flavor". ~Josefina Ingredients 1/4 - 1/2 Avocado per person ~ For every whole avocado used: 1 Tablespoon of fresh Cilantro, chopped 1 Tablespoon of Onion, chopped 1 Tablespoon of Olive Oil 1 Tablespoon of Media Crema 1 Tablespoon of Lime Juice 1/2 Garlic Clove 1 teaspoon Serrano or Jalapeno Chili, seeded and chopped Salt & Pepper to taste
Directions: Add all ingredients to blender and blend thoroughly. You should get a very smooth mixture. You can mash it together with a fork. but be sure to take extra special care to get the ingredients very finely chopped.
Concina con Alma ~ Mexican Flan
"This is a recipe of my mother and my aunts from Cordoba, Veracruz. Make it with love and patience. This dish is for everyday as well as special occasions; it is always a much-loved dessert in all families". ~Josefina Ingredients: 1 cup Sugar for the Caramel 7 Eggs 1 1/2 cups of Sugar 2 cups of Condensed Milk 3 teaspoon of vanilla 3 teaspoon of Triple Sec
Directions: Heat the cup of sugar for the caramel in an 8" or 9" pan on top of the stove until it starts to make a lot of smoke. Set aside and cool. Remember that darker is tastier.
In a large bowl, mix the rest of the ingredients. Try to create a very uniform mixture; this may require you to use your hands. When uniform, pour the mixture into the pan with the caramel, cover with aluminum foil. Cook in a water bath on the stove top for 1 1/2 hours, or you can bake in an oven at 350 degrees for 1 hour.
When it is ready, let cool. Remember at the time of serving, you will want to turn the pan over and remove the flan, so that the caramel is on top.

Some new chefs are using Jamaica flowers to garnish dishes, caramelizing them first. they are very attractive and colorful. ~ Josefina Ingredients: 1 cup of dried Hibiscus Flowers 2 cups of Water Sugar to taste Ice to taste 1/2 gallon of Water Directions: Boil the dried flowers in the 2 cups of water for 10 minutes. Let cool. Strain the flowers from the water. Now, add the 1/2 gallon of water, ice and sugar. Serve
