Everything for thsi dish is made in one pot: sweet potatoes, apples and pork chops are layered in a casserole dish and baked in the oven. Fresh or dried thyme is a nice addition to this dish. You can also add a glug of white wine along with the stock! Ingredients 4 pork chops salt and pepper, to taste oil for frying 150 ml vegetable stock 3 small potatoes, peeled and sliced 3 small apples ~ peeled, cored and sliced Directions Preheat oven to 190 C. Season pork chops with salt and pepper and brown in oil on both sides in a heavy casserole over medium high heat. Remove chops and set aside. Pour stock into the casserole and scrape the browned bits from the bottom with a wooden spoon. Layer sweet potatoes into the casserole, top with apples and finally add the pork chops. Cover and cook 20 minutes in the preheated oven. Uncover and cook for a further 10 minutes, until pork is no longer pink in the center and potatoes and apples are soft.
